Happy second day of spring and day off of work!! It certainly does not feel like spring here in St. Louis. Winter has decided to stick around for a bit, keeping the temperature around the 30s. Not exactly my idea of spring weather!!
Spring always reminds me of fresh flowers and the idea that farmers markets and fresh produce is around the corner.
I found this lovely little chart on the seasonality of fruit and vegetables from eatwell.org
Each month we will highlight the fruits and vegetables that are in season.
Here’s what you should look forward to for the rest of March and April!
Spinach and Asparagus are in season the rest of March. Not sure about Spinach??
Well if Popeye’s muscles didn’t convince you to eat it maybe this will!
Spinach has anti-inflammatory and anti-cancer properties, full of antioxidants like: vitamin C, vitamin E, beta-carotene, manganese, and zinc, AND it has beta carotene in it to help with your eye sight.
The best part of spinach: it is the one of the lowest calorie vegetables out there!! 1 cup cooked spinach has 40 calories, that’s nothing!!
So next time you’re at the grocery store pick up some delicious spinach to add to your meal!!
Well I’m off to go tackle 13.3, enjoy the rest of your day!
What do you like to do on your day off??
