Carnitas and Eggplant Chili
1 yellow Squash
1/2 of a large eggplant or a medium eggplant
1 large tomato
10-12 oz of carnitas ( I used the precooked carnitas from Trader Joe’e; recipe from foodnetwork.com to follow)
1 12 oz can of diced tomatoes ( I used fire roasted tomatoes from Trader Joes)
1 1/2 tablespoon Cumin
1 1.2 tablespoon chili powder
1 garlic clove chopped.
1.put all the ingredients into a pot or into a skillet and heat on medium until the eggplant and the zucchini are tender and cooked.
2. Then simmer for 20 minutes.
3. Eat and enjoy
